Day 8!


So breakfast was once again guacamole and 2 fried eggs, so I didn't bother with a photo - and lunch was leftovers from last night's dinner, so no photo of my lunch either.

I do however have a photo of the lunch I packed for the hubby.
I had bought a package of those Paleo wraps when we started and finally decided to use one in his lunch - His wrap is roast beef, organic iceberg lettuce, tomato and my homemade mayo.
He was not a fan, the wrap is made from coconut and he didn't like the coconut flavor with the rest :(  Plus I guess the tomatoes made it a little soggy :(
He also had pepperoncinis, a sliced kiwi, pecans and pistachios.




I wasn't very hungry for dinner and ate a bit late, but it was tasty :)

I needed something quick and easy - just cooking for myself tonight as hubby is gone for the night on business - He is still sticking to it and ordered a grilled chicken salad and grilled asparagus from room service :) 
I seasoned (pink himalayan sea salt, pepper and garlic pepper blend) and cooked up some organic chicken breast, made a salad of organic greens tossed w/ red wine vinegar, garlic olive oil and spike seasoning (my Grandmother Nancy always made salads dressed this way - It's been forever since I've made it that way ). Then I toasted up some almond slivers and voila! :)


I had a few bites of guacamole while I was cooking also.

Day 8 - Success!
