Day 2! Taco Salad :)

Day 2!


Day 2 went well :)

I started my day with 2 scrambled eggs and half a pear

I sauteed onion and a sliced mushroom in coconut oil and then added the whisked up egg and when they were almost set, I added about 1/4 of an avocado - voila!



No photo of lunch; it was just leftover Guacamole Chicken Salad and Pistachios :)

Dinner, at hubby's request, was Taco Salad - onion and garlic sautéed in coconut oil then added and  browned 1 lb organic grass fed beef and spiced it up (Even before going Paleo, I stopped buying the taco seasoning mix years ago... I did drain off some of the fat before adding spices) - mixed up an avocado cilantro lime dressing and added muir glen organic salsa, green onions, cilantro, black olives and organic grape tomato slices 
The spices I used in the meat were chili powder, smoked paprika, cumin, cayenne, celery salt, salt


I should have taken the photo of hubby's, his looked prettier :P

The dressing was thrown together with 3/4 of an avocado (left over from breakfast), blended with a bit of walnut oil, lime juice, cilantro, salt and pepper and water added as needed for consistency - I tasted and adjusted cilantro, lime and salt as needed :) So, not really a recipe, but if it helps (all amounts are approx, adjust to taste!):

Avocado Cilantro Lime Dressing

3/4-1   Avocado
1/4 c    Water
2 Tbs   Walnut Oil
Juice of 1 small Lime
1/4 c   Cilantro
1/2 tsp   Salt
1/4 tsp   Pepper
