Day 4!
What a day!
So, last night I seriously dreamt that I was eating a Bahn Mi!
I really didn't think I was missing carbs, but, well, here we are - haha!
I also didn't sleep well, not that I typically do, but worse than usual last night - Partly because hubby is out of town, I never sleep well when he's gone (worse than when he's here and snoring - lol)
I had a headache all day - I wasn't sure if it was lack of sleep or my body adjusting to this new way of eating - my friend told me it's called 'Carb Flu' and said she had it from Day 4 to Day 10 - Right on cue?
I won't bore you with a breakfast picture since I had the same thing as yesterday, nor a lunch picture since that was leftovers from yesterday's lunch :)
I did get my case of coconut milk with no additives and BPA free cans - They did not arrive unscathed...
Every.Single.Can.Dented!
4 slightly, 4 moderately and 4 badly
Amazon gave me a partial refund since I needed to use a couple cans ($15 of the $33.17 I paid)
The texture is definitely not like other canned coconut milk with additives and it's not a great texture :(
I used 2 cans in the Thai Green Curry I made for dinner - Along with 2 c organic veggie stock lots of veggies (a frozen asian veggie mix, broccoli, asparagus, cauliflower, onions and bell pepper - plus a can of water chestnuts) and a large organic chicken breast w/ green curry paste and a little fresh basil and cilantro - Lots of chopping, but easy otherwise.
My daughter and her friend had theirs with brown rice...
I also had half a banana today (hoping it would help the headache - It seemed counter-intuitive to me to cut all the crap out and then take some ibuprofen - but if it keeps up, I will take some...) and a few pistachios.
