Day 3!

Day 3!


Day 3 and really not missing the off-limits foods :)

(Did I mention, the only part I'm not totally following is the no alcohol?  I do have Vodka & Seltzer most nights so :P  haha - It's great with lime, ginger slices and mint - I also add that stuff to plain seltzer - yum!)

Ok, so....  Breakfast :)

2 eggs fried in bacon fat - as you can see, I broke one yolk with the spatula trying to flip them...
Leftover avocado chunks from last night's Taco Salad was made into a quick guac with a grape tomato, a little onion and cilantro (I store the chunks in lime juice, so that was already in it) and salt  :)

My breakfast really hit the spot this morning :)


BTW, when you see these white plates, they are smaller plates, salad sized from a restaurant hubby worked for years ago that went under - many many years ago :)  I didn't want you to think these servings are huge! ;)

As I started getting hungry for lunch, I was wracking my brain on what I could throw together that wasn't yet another avocado based dish :P  Not that I mind, I love avocado!

Every Autumn, a friend of ours and his girlfriend (my husband's co-worker and friend) throw a party on his farm where we get to take home pumpkins and various squash.  I still had 2 spaghetti squash and a butternut squash, plus 2 acorn squash :)  So, I decided to make a meat sauce and cook the smaller spaghetti squash and make us that for lunch (Myself and my 22 year old daughter)



I sauteed onion, organic red bell pepper and sliced baby bella mushrooms and garlic in Trader Joe's Organic Garlic Olive Oil, added a lb package of 93% Grass Fed Organic Ground Beef (I bought a 3-pack at Wegman's for $14.99) and browned that up, added a jar of Organic Heirloom Purple Cherokee Tomatoes, a couple Tablespoons organic jarred tomato paste and then some salt, pepper and chili flakes, let that simmer for a bit and added some fresh chopped basil. let it simmer a little longer and served over spaghetti squash :)

It made enough that I have lunch for tomorrow too - Score!  :)


OK, so dinner...  My lunch was nice and filling, so dinner was a bit later, a little after 7:30...

I had gotten some Organic Chicken Breast at the beginning of the week - The package was about 1 1/3 lbs and at $7.49 per pound on sale, I wasn't buying more to feed 3 of us!  (Hubby is out of town until Saturday :( )

I decided to cut them into strips, coat them in my Organic Cage Free Egg and then Trader Joe's Cashew Meal (I completely forgot I had coconut flour and had meant to do egg, coconut flour, egg, cashew meal... Next time!).  I heated some coconut oil and browned them, then put them in the oven at 350 for about 25 minutes - I thought they were tasty and will likely do them again :)  I should have used the larger pan, they were crowded and therefore didn't brown as well as I'd hoped.

On the side is just organic greens tossed with leftover Avocado Lime Cilantro Dressing from last night's Taco Salad :)
