Day 1 - Success!!
Okay, I admit it, My 'last hoorah' was a doozy - Being Super Bowl Sunday didn't help - Nor did the decision to finish off my sweet tea vodka before I couldn't have it any more - lol - Don't judge too harshly ;)
Sooo, breakfast was just 2 boiled eggs I already had in the fridge :)
Lunch was Guacamole Chicken Salad - No tomato because my daughter used my organic tomato I had set aside for this :( I was not a happy Mama! (She's 24)
So... I already had a couple cans chicken breast in the pantry that contain only chicken breast, water and salt, so I used that - For the Guac (I don't measure): 1 Avocado, half an onion, cilantro, garlic, fresh lime juice, salt - served over organic greens with a little of the Paleo Avocado Ranch Dressing I posted yesterday :)
For my husband, I packed a nice Paleo lunch - Kinda threw me back into Bento a bit - lol - I fought the temptation to pull out the egg molds! ;P
He has a BLT Salad of Organic Romaine, Organic Tomato, Uncured Bacon and a Cage Free Organic boiled Egg - Then some Macadamias, a Kiwi and a couple Pepperoncinis - Avocado Ranch for his Salad
Dinner was delicious! My daughter - the 22 year old, not the tomato stealer ;) haha - made Sweet Potato fries - she coated them in coconut oil and seasoned them, then baked - I sauteed up some mushrooms in Trader Joe's Organic Garlic Olive Oil to top off my Free Range Beef Tenderloin Steaks :) YUM!!
Who knew Montreal Steak Seasoning had Sunflower Oil?! So, that was out - I mixed up some coarse sea salt, celery salt, pepper and pepper/garlic blend for my steaks :)
I also had an ounce of Macadamia Nuts after lunch - yum :)
I think I had a successful Day 1! :)
(Told ya my pics would not be great - lol)
